It was particularly known for its high quality in the 1950s and 1960s, and resurfaced in the 1990s (and beyond) again as a top domaine when Pierre took over. He carries out natural growing methods, preferring to follow his own style rather than those of prescribed organic practices. He likes to pick later rather than earlier, enabling him to have the ripest grapes possible. Once sorted and gently de-stemmed, the grapes are then cold soaked, fermented and aged in mostly medium-grain Bertranges French oak barrels from François Frères – 30% for Bourgogne, 50% for 1er Crus and 70-80% for Grand Crus.
